Cake Mix Banana Muffins

Boxed cake mix makes a great cake, but it can also be used for several other baked goods… cookies, brownies, etc. So when I was making banana muffins a few weeks ago, I thought, hey, let’s see how this works with a cake mix. Success! I had to sort of guess what other ingredients to use and in what amount, and I think the results were pretty good. Depending on how much banana you use, you might need to use more/less yogurt to get the right consistency.


2 eggs
2-3 medium overripe bananas, mashed
1/2 cup plain yogurt
2 tsp. vanilla
1 yellow cake mix
1/2 tbsp. cinnamon

3/4 cup butterscotch chips

1. Preheat oven to 400. Spray 12-cup muffin tin with nonstick cooking spray.

2. In large mixing bowl, mix eggs, bananas, yogurt, and vanilla. Add cake mix and cinnamon, stirring until just mixed (don’t overmix). Fold in butterscotch chips. Pour mix evenly into muffin tin. Don’t worry if your muffin cups seem to be a bit full – this will give you nice big muffin tops!

3. Bake muffins about 10-12 minutes, until light golden brown. Allow muffins to cool about 30 minutes. Store covered at room temperature.
