What do you do when you pick $25 worth of juicy, red strawberries? Well, first you eat strawberry shortcake. 🙂 But really, once you do that a few times, what do you do with all those berries?
You make jam, that’s what you do!
Now, I initially planned to make my strawberry jam the real way. But I decided it wasn’t worth going through all the trouble of boiling the glass jars, etc., if it didn’t work out. Because, you see, I’d never made jam until now. So, I decided to start small, with freezer jam. It’s really pretty easy with the help of Sure-Jell and these plastic freezer jars, both of which you can find at your local grocery store.
So, I’m sure you’re wondering, how was the jam? It’s really good – tastes just like strawberries – nice and fresh! I will definitely be eating my own jam this summer, not the stuff from the store!
Strawberry Freezer Jam
2 cups crushed strawberries
4 cups sugar
1 package pectin (such as Sure-Jell)
3/4 cup water
1. Mix crushed strawberries with sugar, and let stand for 10 minutes. Meanwhile, stir the pectin into the water in a small saucepan. Bring to a boil over medium-high heat, and boil for 1 minute. Stir the boiling water into the strawberries. Allow to stand for 3 minutes before pouring into jars or other storage containers.
2. Place tops on the containers, and leave for 24 hours. Place into freezer, and store frozen until ready to use.
