Today is my brother and sister’s birthday (they’re twins). Happy birthday, guys! I made you some pancakes.
Honestly, all amazing bakeries and from-scratch recipes aside, to this day I think the best cake on earth is Funfetti. From a box. Although, these do look tempting…
Lots of people eat cake on their birthdays. And quite a few eat cake for breakfast on their birthday, just because they can. It only makes sense to turn cake into pancakes for these birthday folks, no?
Super fluffy and sweet. A perfect birthday breakfast treat!
PS: I have to thank my mom for birthing my siblings saving the day for me yesterday and today on the blog. I accidentally left my camera at my parent’s house over the weekend – she’s done a great job picking out pictures to email me from the 80,000 I take of everything I make!
Funfetti Pancakes
Makes about 6-8 pancakes
1 1/2 cups Funfetti cake mix
2 tbsp. oil
1/2 cup milk
1 egg
Heat a lightly greased frying pan over medium-low heat. Meanwhile, stir cake mix, oil, milk, and egg until combined. Pour about 1/4 cup of batter into pan for each pancake, cooking until browned on each side.
Serve pancakes traditionally (with butter and syrup) or funfettied (with whipped cream, sprinkles, and chocolate syrup).
This recipe is perfect! Best study break ever! Thanks so much for posting :]
These were great! Thanks for the recipe. Today was the last day of preschool for my oldest – perfect send off to the last day of school.
You’re welcome! I’d love to start my last day of school with these. 🙂
These sound really good! I have a question, could I use any other cake mix flavour and add the sprinkles?
Definitely! Use whatever cake mix flavor you want!
I just made these for fun. And they’re so whimsical. They taste exactly like cake!
I haven’t made these in so long — I forgot how much they actually taste like cake! I’ll have to make them again soon. 🙂
I PLAN ON MAKING THESE FOR MY FAMILY AS A FUN VALENTINE DINNER!!! 🙂
Aww, that sounds fun! I love pancakes and breakfast for dinner!
Do you think this same batter could be used for waffles? It might need to be tweaked a bit, but I like waffles more than pancakes and this sounds too tasty to pass up!
I’m so sorry I’m just getting back to you now — yes, I think the batter would work great for waffles!
