Mint Chocolate Chip Funfetti Cookies

Happy black Friday, folks!  For the first time in a long time, I opted not to wake up in the middle of the night to go holiday bargain shopping.  Instead, I slept in, went for a run, ate pumpkin pancakes, and made these delicious funfetti cookies.  But they’re not just any funfetti cookie — they’re mint chocolate chip funfetti cookies!

I told myself yesterday that I wasn’t going to start sharing Christmas recipes until December.  Clearly, that worked. 😉  I’m blaming my mom, she put up her Christmas tree this morning.  Christmas cookies just seemed right.

These cookies are so so simple to make and perfect for the holidays.  I picked up some peppermint extract while at Trader Joe’s (!) the other day, and when I spotted holiday Funfetti mix at the grocery store yesterday morning, I knew the two were destined to be together.

I also added a touch of cornstarch to the cookie dough, which, if you’ve noticed on Pinterest, makes for the fluffiest, softest cookies ever.  Toss in some miniature chocolate chips and you’re golden!

I was in the mood for big cookies this morning, but you can just as easily make little cookies out of this recipe!

Combine funfetti cake mix, peppermint extract, and miniature chocolate chips for the perfect soft and fluffy holiday cookie.  

Makes 1 1/2 dozen large cookies (or 3 dozen small cookies)

Prep time: 10 minutes

Cook time: 12 to 15 minutes

  • 1 box Funfetti cake mix
  • 1 teaspoon cornstarch (optional)
  • 2 large eggs
  • 1/4 cup oil
  • 1 tablespoon water
  • 1 1/2 teaspoons peppermint extract
  • 1/2 cup chocolate chips (or extra, if desired)

Heat the oven to 350 degrees F.  Line two large cookie sheets with parchment paper.

In a large mixing bowl, combine all of the ingredients and stir until mixed well.  For large cookies, form the cookie dough into golf ball size mounds, then flatten slightly once on the cookie sheet (for smaller cookies, form the cookie dough into tablespoon size mounds).

Bake 12 to 15 minutes (or 10 to 12 minutes for smaller cookies) or until the cookie edges are light golden brown.  Allow the cookies to cool 2 to 3 minutes before removing from the cookie sheet to cool completely.[/print_this]

  1. ok. i think i’m in love with you liz. in a totally sprinkle-mint-chocolate-funfetti-cookie sort of way!!!! i never thought to add mint extract to cake mix cookies before, let alone FUNFETTI cookies before! i had big plans for my sprinkles this week but now all i want are these COOKIES! 🙂
